Christmas Bake-Along

Each Christmas season, I bake several loaves of Christmas Stollen, a sweet bread filled with dried fruits traditional in Germany. The unique recipe goes back several generations in my wife's family. In this class, we'll mix the enriched yeast dough, proof it, shape and proof loaves, and ice it. I'll give step-by-step video instructions and answer questions along the way. Even if you have minimal experience with yeast doughs, you will be a success with this delicious treat!

You will need a large bowl, two baking sheets, and the ingredients: flour, white sugar, butter, eggs, lemon, yeast, salt, and milk for the dough; slivered almonds, dried or glace fruit (I use cherries, orange peel, pineapple, and raisins), brown sugar, and cinnamon for the filling; and powdered sugar for the glaze. You'll also need access to a reliable oven. I will demonstrate both mixer and by-hand methods for mixing the dough.
